In appearance and taste, sunflower butter resembles peanut butter, but it has as much as 30 percent less fat. And best of all, you can make it yourself. You only need a few ingredients, and the basis is sunflower seeds. This butter is full of vitamin E, it is available on the market, but when you make it yourself, you can be sure that it does not contain preservatives and artificial sweeteners. You will need: ordinary, unpeeled and unsalted sunflower seeds, salt, honey (or sugar or any similar "sweetener"). And olive oil. And we start preparing sunflower butter. Add 3 cups (250 ml) of sunflower seeds to the pan and fry them for a minute or two. Stir them constantly with a wooden spoon and shake the pan so that the seeds do not burn. (Don't buy fried seeds to skip this step, because they don't have enough moisture to get creamy butter). Be careful not to overcook them, as they will lose moisture. Put them in a grinder or blender with 3/4 teaspoon of salt and one tablespoon of honey (or sugar). When the seeds turn into powder, you should not immediately add olive oil, because you will get butter full of lumps. Continue mixing for another 10 minutes, because after that time they will start releasing their own oil, so the sunflower powder will become sunflower butter. Continue mixing for another five minutes in a blender or food chopper, until the mixture becomes softer. Add another teaspoon of honey. Continue mixing and gradually add the olive oil (one or two tablespoons) until you see that the mixture has turned into a “butter mass”. Try the mixture. If you want, you can add cinnamon or vanilla sugar. Pour them into bowls and cover. You can spread it on bread, eat it with fresh carrots, apples and, of course, crackers or toast.
