“Yun Wu” literally meaning “cloud and mist,” is something of a generic name for green teas. We feel it’s appropriate to use for this particular tea because it’s evocative of the foggy mountain gardens this tea was grown in along the western edge of Zhejiang province. Their land sits between 500 - 600 meters above sea level. At this elevation, thick clouds blanket the land. This cloudcover at once helps keep the garden’s tea bushes hydrated with mist and also provides some welcome shade from direct sunlight. This excellent climate yields thick-leafed tea, rich with flavorful amino acids. For brewing of Yun Wu and many other high mountain green teas, the vessel is a small bowl with a wide opening. Usually we would have the water fully boiled, rinse the bowl with a little bit of the newly boiled water, throw in the tea leaves and pour in the boiling water. Then we would drink directly from the bowl whenever we feel it's ready, and add in more hot water when needed. That's basically the simple "brewing method" if it could be called a "method". There are some variations of brewing method mentioned previously. And some green teas, such as Long Jing and Bi Luo Chun do require slightly lower water temperature (water of 80C and above won't hurt them though), partially because they are made of tender young leaves, but largely because they are not high mountain green teas (high mountain green teas such as Yun Wu and Huang Shan Mao Feng are made of tender young leaves too but do very well with boiling water).
